We recommend

Preparation:

    Step 1
  • Cut off the top third (stem end) of each tomato. Cut a small slice off the bottom to help the tomatoes stand upright. Using a small spoon, scoop out the seeds from each tomato to create a hollow. Place them on a plate or platter. Sprinkle the tomatoes with 1/4 teaspoon of salt.
  • Step 2
  • In a bowl, mash the cream cheese with a spatula until it's soft and pliable. Gently fold in the blue cheese, being careful not to break up any lumps. Season with pepper.
  • Step 3
  • Using two small spoons, fill the tomatoes with the blue cheese mixture. The amount will depend on the size of the tomatoes; small tomatoes should have about 1 teaspoon of filling. You can also transfer the filling to a pastry bag or a zip-lock bag with the corner snipped off and pipe the cheese mixture into each tomato.
  • Step 4
  • Combine green onions and bacon in a small bowl. Sprinkle each tomato with the mixture. Drizzle hot honey over the entire plate. Serve.
