Vegan Peach Cobbler

Using ripe fruit, this cobbler cooks in just 20-25 minutes. If your peaches aren't quite ripe, we suggest covering the pie with foil and baking until the fruit is easily pierced with a knife, 10 to 15 minutes. Then remove the foil and bake until golden brown.

Ingredients for the recipe:
Filling
- 1.2 kg ripe peaches, cut into small pieces
- 2 tbsp. maple syrup
- 4 tsp arrowroot powder
- 2 tsp vanilla extract
- 1/2 tsp ground cinnamon
Dough
- 1/4 cup unsweetened almond milk or soy milk
- 1 teaspoon lemon juice
- 2.5 cups whole grain flour
- 1.5 tsp baking powder
- 1 teaspoon cinnamon
- 3/4 teaspoon baking soda
- 3/4 cup coconut sugar
- 1/4 teaspoon sea salt
- 1/4 cup coconut oil, melted
- 1 tbsp maple syrup

Cooking the dish according to the recipe:
- For the fillingPreheat oven to 180°C. Add peaches, maple syrup, arrowroot, vanilla, and cinnamon to a large bowl and mix thoroughly until smooth. Transfer the fruit mixture to a 20x30 cm baking dish and spread evenly.
- For topping: mix almond milk and lemon juice in a small bowl and set aside for 5 minutes. Sift the flour and add it along with the baking powder, cinnamon, and baking soda to a medium bowl.
Add the sugar and coconut sugar and mix. Pour the coconut oil into the flour mixture and mix with your hands. Add the almond milk and maple syrup and mix thoroughly. - Spread the topping over the filling and bake until the fruit is bubbling and the top is browned around the edges, 20 to 25 minutes. Remove the cobbler from the oven and let it cool for 10 minutes before serving.
This peach cobbler can be prepared in individual ramekins.
