With individual servings and a little butter added, these peach cobblers are not only delicious, but also contain a surprisingly healthy surprise.

Ingredients for the recipe:
- Non-stick cooking spray
- 1200 g ripe peaches, pitted and cut into large pieces
- 1 tbsp. starch
- 0.5 cups plus 2 tablespoons of sugar
- 3/4 cup wheat flour
- 2 tablespoons ground flax seeds
- 1/4 tsp coarse salt
- 3 tablespoons chilled unsalted butter, cut into small pieces
- 2 tbsp buttermilk or low-fat milk
- Low-fat vanilla yogurt or frozen yogurt, for serving, optional

Cooking the dish according to the recipe:
- Preheat oven to 375°F (190°C). Lightly spray 6 170g (6 oz) muffin tins with cooking spray and place on a baking sheet.
- In a large bowl, combine the peaches with cornstarch and 2 tablespoons of sugar. Let them sit until the juices release, about 10 minutes. Divide the peaches and juice among the molds.
- While the peaches are settling, combine the flour, remaining 1/2 cup sugar, flaxseed, and salt. Add the butter and mash with a fork until the mixture forms medium-sized chunks. Add the buttermilk to soften the mixture and prevent large clumps from sticking together.
- Sprinkle the mixture over each peach-filled pan. Bake until the fruit is bubbly and the tops are crisp and golden, about 40-45 minutes. Serve the cobblers warm with vanilla yogurt or frozen yogurt, if desired.
