With individual servings and a little butter added, these peach cobblers are not only delicious, but also contain a surprisingly healthy surprise.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • Non-stick cooking spray
  • 1200 g ripe peaches, pitted and cut into large pieces
  • 1 tbsp. starch
  • 0.5 cups plus 2 tablespoons of sugar
  • 3/4 cup wheat flour
  • 2 tablespoons ground flax seeds
  • 1/4 tsp coarse salt
  • 3 tablespoons chilled unsalted butter, cut into small pieces
  • 2 tbsp buttermilk or low-fat milk
  • Low-fat vanilla yogurt or frozen yogurt, for serving, optional

Cooking the dish according to the recipe:


  1. Preheat oven to 375°F (190°C). Lightly spray 6 170g (6 oz) muffin tins with cooking spray and place on a baking sheet.
  2. In a large bowl, combine the peaches with cornstarch and 2 tablespoons of sugar. Let them sit until the juices release, about 10 minutes. Divide the peaches and juice among the molds.

  3. While the peaches are settling, combine the flour, remaining 1/2 cup sugar, flaxseed, and salt. Add the butter and mash with a fork until the mixture forms medium-sized chunks. Add the buttermilk to soften the mixture and prevent large clumps from sticking together.
  4. Sprinkle the mixture over each peach-filled pan. Bake until the fruit is bubbly and the tops are crisp and golden, about 40-45 minutes. Serve the cobblers warm with vanilla yogurt or frozen yogurt, if desired.
