Make your own breakfast in muffin tins! They contain the most common ingredients for a morning omelet: eggs, ham, cheese, bell peppers, and onions. This simple muffin-omelet recipe makes a fun addition to your everyday breakfast and will brighten up any holiday morning. These muffin-omelets can also be frozen if you're making them in advance. They keep well in freezer bags. Just reheat in the microwave before serving and enjoy! These individual casseroles are also perfect for dinner or snacking throughout the day.
The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:
- 20 large eggs
- 0.5 tsp salt
- 0.5 tsp black pepper
- 0.5 tsp chili powder
- 220 g thin slices of ham, cut into cubes
- 1.5 tbsp. freshly grated cheddar
- 1 large green bell pepper, finely diced
- 1 large onion, finely diced

Cooking the dish according to the recipe:
- Preheat oven to 350°F (175°C). Generously spray 24-cup muffin tins (2 standard muffin tins) with cooking spray.
- Crack the eggs into a bowl, add salt, black pepper, and chili powder. Beat until smooth. Add the ham, grated cheddar, bell pepper, and onion and mix.
- Using a measuring spoon, ladle the egg mixture into the casseroles. Bake for 20-22 minutes, until puffed and just set.
- After a minute or two, the casseroles will begin to shrink a little; this is normal! Run a knife around the edges of each mold and remove the casseroles from the molds. Serve warm or at room temperature.Note
These casseroles are freeze-safe! Freeze them directly in the pan, then transfer them to zip-lock bags. Defrost and microwave before serving.
