Portioned tarts with tomatoes and goat cheese

These individual tarts are surprisingly simple to make, but the flavor is incredibly rich and multifaceted thanks to a filling of sweet and spicy caramelized onions, tart and creamy goat cheese, sweet tomatoes, fragrant basil, and salty Parmesan. The best part about this recipe is that the tarts are made with store-bought puff pastry, so you don't need special molds. You can even shave the Parmesan for the topping with a regular vegetable peeler. These tarts look charming and festive. A perfect way to enjoy summer tomatoes!

Ingredients:

  • 1 package (500g/2 sheets) puff pastry, defrosted
  • High-quality olive oil
  • 4 cups thinly sliced ​​onion (2 large onions)
  • 3 large cloves garlic, thinly sliced
  • 3 tbsp. dry white wine
  • 2 tsp chopped fresh thyme leaves
  • 4 tbsp. l. freshly grated parmesan + 60 gr. parmesan shavings
  • 120 g goat cheese with herbs and garlic
  • 1 large tomato, sliced ​​0.5 cm thick.
  • 3 tablespoons thinly sliced ​​basil leaves
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Unroll a sheet of puff pastry on a lightly floured work surface and lightly roll it into a 27.5 x 27.5 cm (11 x 11 inches) square. Using a saucer or other 15 cm (6 in) diameter round object as a guide, cut out two circles from the sheet of puff pastry. You won't need any scraps. Repeat with the second sheet of puff pastry to make four circles in total. Place the circles on two parchment-lined baking sheets and refrigerate until ready to assemble.
  • Step 2
  • Preheat oven to 220°C.
  • Step 3
  • Heat 3 tablespoons of olive oil in a large skillet over medium heat. Add the onion and garlic. Cook for 15-20 minutes, stirring frequently, until the onion is soft and there is almost no water left in the pan. Add 0.5 teaspoon of salt, 1/4 teaspoon of black pepper, wine, and thyme and continue cooking for another 10 minutes, until the onion is golden brown. Remove from heat.
  • Step 4
  • Using a sharp knife, mark a 0.5 cm border on each circle of dough. Prick the dough inside the circle with the tines of a fork and sprinkle each circle with 1 tbsp of grated Parmesan, being careful not to get it on the border.
  • Step 5
  • Place a quarter of the onion mixture on each circle, making sure to leave the edges open. Crumble 30g of goat cheese over the onions. Place a slice of tomato in the center of each tart. Lightly brush the tomato with olive oil and sprinkle with basil, salt, and black pepper. Finally, sprinkle each tart with 4-5 shavings of Parmesan cheese.
  • Step 6
  • Bake for 20-25 minutes, until the pastry is golden brown. The bottom baking sheet may need to bake for a few minutes longer. Serve the tarts hot or warm.
