Ceviche is a popular Latin American appetizer made from raw fish or shellfish marinated in lime or lemon juice. In Peru, ceviche is not just a traditional dish, but a national symbol, celebrated annually on June 28th as Ceviche Day, and even has a monument erected in its capital, Lima. Besides its health benefits, this appetizer is also considered a powerful aphrodisiac.

Make fresh scallop ceviche with onions, tomatoes, and chili peppers. Serve with rice or corn. Or arrange on lettuce leaves and serve as appetizers at a party.

In a glass bowl, combine 1 pound (450 g) of scallop, 2 diced green tomatoes, 2 minced shallots, 1/2 jalapeno, 1/3 cup lime juice, 3/4 cup orange juice, and 1.5 teaspoons salt. Cover and refrigerate for 4 to 6 hours, tossing occasionally. Season with salt, pepper, and chopped cilantro. Top with avocado slices.
