Tilapia Ceviche

Ceviche is incredibly popular in Central and South America. It has a restaurant-like elegance, but you can easily make it at home. It's essentially a light salad of raw fish marinated in citrus juice. This recipe uses tilapia fillet. Freeze it to make it easy to dice into small cubes, and soak it in lime juice for 15 minutes. Once the fish has become opaque, you can toss it with vegetables and herbs. Serve tilapia ceviche on crispy tostadas with thin slices of avocado and lime wedges for an extra squeeze of juice.


Ingredients:


Ceviche
  • 0.9 kg tilapia fillet, cut into small cubes *
  • 1 cup lime juice (about 8 large limes)
  • 0.5 cup chopped, seeded tomato
  • Half a cucumber, peeled, seeded and finely diced
  • 0.5 cup finely chopped onion
  • 1/4 cup chopped fresh cilantro leaves
  • 0.5 cup tomato and clam juice, optional
  • 1 tbsp store-bought hot sauce, optional
  • 1 serrano chili, optional
  • Grilled Tostadas, recipe below, or 6 store-bought tostadas
  • Mayonnaise to spread
  • 1 avocado, halved, pitted and peeled, thinly sliced
  • 1 lime, cut into wedges

Grilled Tostadas
  • 6 corn tortillas
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Place the tilapia in a medium bowl. Pour lime juice over the fish and toss gently. Cover with plastic wrap and refrigerate until the fish turns white throughout, about 15-20 minutes.

    Note *

    Fish is easiest to cube when it's partially frozen; it also gives a neater appearance. Use a very sharp knife.
  • Step 2
  • Remove from the refrigerator and drain the lime juice, gently squeezing the fish with your hands. Add the tomato, cucumber, onion, and cilantro. Season the ceviche with salt and pepper to taste. Add the tomato juice, hot sauce, and chili, if using.
  • Step 3
  • Spread mayonnaise generously on the tostadas and top with the ceviche. Arrange the avocado slices on top and serve immediately with lime wedges.
  • Step 4
  • Grilled Tostadas:

    Preheat a grill or grill pan over medium heat.

    Place the tortillas on a wire rack or grill pan and let them dry until crispy.
