When grilled correctly, scallops are crispy on the outside and very tender on the inside. They can be served as an appetizer with white wine or used in green salads, Italian pasta dishes, or risotto. Large scallops are best for grilling, as smaller ones can dry out while the crust is cooking. They should be thoroughly drained and cooled. For seasoning, simply add black pepper, salt, and lemon pepper. Its citrusy, spicy notes perfectly complement the sweet flavor of this seafood delicacy.
