Key lime pie is an American dessert made with lime juice, egg yolk, and condensed milk in a pastry shell. It is the official state pie of Florida. The classic pie is made with small, tart Mexican limes, which are juicier than larger limes. In this recipe, the shell is made from crumbled graham crackers, layered with lime curd, and topped with whipped cream. A unique feature of this recipe is that the pie is served individually, with each serving in an individual bowl.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


Lime curd (cream)

  • 1 cup lime juice
  • 2 tbsp. sugar
  • 220 g butter
  • 14 eggs

Topping

  • 1.5 cups whipping cream
  • 1/2 cup powdered sugar
  • Lime zest, for garnish

Cooking the dish according to the recipe:


  1. Lime cream: Combine lime juice, sugar, and butter in a medium saucepan and heat over low heat until melted. Beat the eggs, add them to the saucepan, and mix well. Bring to a gentle simmer. Stir constantly and cook until the mixture thickens and becomes creamy, 5-7 minutes. Strain through a sieve. Refrigerate for 2 hours.
  2. Cake: Place the sugar and graham crackers in a food processor. Pour in the melted butter and pulse until combined.

  3. Topping: Whip the cream with sugar until stiff peaks form.
  4. Assemble the cake as follows: Line the bottom of a serving bowl with the crumb mixture, then the lime curd. Top with whipped cream and garnish with lime zest.
