Key lime pie, filled with condensed milk, lime, and egg yolks, is considered a traditional dessert of the state of Florida. It was supposedly invented by local sponge fishermen who, spending many days at sea, created a no-bake pie using readily available ingredients. Indeed, the Florida key lime pie recipe is incredibly simple. Firstly, you don't have to knead the dough, as the crust is made from crushed cookies, sugar, and butter. Secondly, the pie is incredibly quick to make. Simply mix egg yolks, sugar, condensed milk, and lime and pour the filling onto the toasted crust. Freeze it, and a delicate, delicious dessert with a slightly tart flavor and a vibrant lime aroma is ready!

Ingredients for the recipe:
Cake
- 1.5 cups crumbled graham crackers (10 crackers)
- 1/4 cup sugar
- 80 g melted butter
Filling
- 6 large egg yolks, room temperature
- 1/4 cup sugar
- 400 g of condensed milk with sugar
- 2 tablespoons grated lime zest
- 3/4 cup lime juice (4 - 5 limes)
Decorating
- 1 cup cold heavy cream 33%
- 1/4 cup sugar
- 1/4 tsp vanilla extract
- Thin lime wedges

Cooking the dish according to the recipe:
- Preheat oven to 175°C
CakeMix in a bowl. graham crackers, sugar, and butter. Pour the crumb mixture into a 22cm pie pan and press it down to form a crust of even thickness on the bottom and sides. Bake for 10 minutes. Then cool completely. - FillingIn the bowl of a stand mixer fitted with a paddle attachment, beat the egg yolks and sugar on high speed for 5 minutes, until the mixture thickens. Reduce the mixer speed to medium and pour in the condensed milk, lime zest, and lime juice. Pour the filling into the crust and place in the freezer.
- DecoratingIn the bowl of a stand mixer fitted with a whisk attachment, beat the heavy cream on high speed until soft peaks form. Add the sugar and vanilla and beat until stiff peaks form. Spoon the whipped cream over the pie using a spoon or pastry bag and garnish with lime wedges. Freeze for several hours or overnight.
