"Nun's Sighs" are traditional Spanish deep-fried choux pastry doughnuts. Spanish convents have historically been considered the place where the most delicious pastries in the kingdom were invented and prepared. Even today, you rarely find these doughnuts in pastry shops; they are mostly fried within the abbey walls. According to legend, while the nuns were cooking in the kitchen, one of them made an obscene noise, and the other sisters burst into such laughter that one of them dropped a piece of choux pastry and landed directly in a cauldron of boiling oil, and the sound was heard again as the doughnuts puffed up in the oil. Most likely, during the Renaissance, they tried to revive all references to choux pastry. This is how the recipe for "Nun's Sighs" doughnuts (Spanish: suspiro de monja) or Pé-de-nonnes. Appetizing, golden-brown with a crispy crust and incredibly tender and airy inside, these donuts are dusted only with powdered sugar. They sell out quickly!
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.
Ingredients for the recipe:
- 200 g butter
- 400 g of sugar
- 5 beaten eggs
- 500 ml of water
- 500 g of premium flour
- Lemon peel
- Olive oil
- Powdered sugar

Cooking the dish according to the recipe:
- Pour water into a saucepan and heat. Add butter, sugar, and lemon zest. When the water boils, remove the zest with a slotted spoon.
- Gradually add the flour, whisking constantly with a wooden spoon. Once all the flour has been added, cook the dough for 15 minutes or until it easily pulls away from the sides and bottom of the pan.
- Remove from heat and let cool. Stir constantly, adding the eggs one at a time.
- Knead the dough and roll it out on a flat surface into a voluminous layer. Cut the dough into cubes.
- Pour plenty of olive oil into the frying pan. When it's hot, drop in the dough cubes and fry until golden brown.
- Remove the finished donuts from the oil and place them on paper towels.
Dust the donuts with powdered sugar and serve.
