Sopapillas (Spanish) Sopaipilla) is a popular delicacy in Latin American countries, where they are sold on every corner. Sopapillas are traditionally made from flour, baking powder or yeast, fat, and a small amount of sugar. The dough is cut into square, triangular, or round shapes and fried in a generous amount of vegetable oil. These donuts are most often served with sweet toppings such as syrup, ice cream, or cream. However, depending on the region, they can be served instead of bread with hot dishes or various sauces.


Ingredients:

  • 120 g of premium wheat flour
  • 45 g whole grain flour
  • 0.5 tsp salt
  • 0.5 tsp baking powder
  • 1 tbsp. sugar
  • 1 tbsp. pork or vegetable fat
  • 1/3 cup of sour milk or kefir
  • Vegetable oil
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a food processor, combine all the flour, salt, baking powder, and sugar. Add the lard or vegetable shortening and pulse. sour milk Mix again, creating a wet dough. Turn it out onto a floured work surface and continue kneading until a sticky mass forms. Wrap the dough in plastic wrap and let it rest for at least 30 minutes.
  • Step 2
  • Pour 10 cm of oil into a heavy-bottomed pan and heat it to 190°C.

    Meanwhile, divide the dough in half. On a lightly floured work surface, roll out one half of the dough to a thickness of 0.3–0.6 cm.
  • Step 3
  • Cut into 6 squares or triangles. Drop 2 pieces, one at a time, into the hot oil and fry, turning, for 40-50 seconds until golden brown. Place the finished sopapillas on paper towels to drain off excess oil. Fry the remaining sopapillas in the same order.
  • Step 4
  • Serve the donuts immediately on warm plates with a scoop of ice cream and drizzle chocolate sauce, with English cream or sprinkled with powdered sugar or cinnamon sugar.
