Potato skins are considered just as nutritious as the potato itself, especially if you're boiling new potatoes. You don't even have to peel them when making mashed potatoes. Boil the halved potatoes, mash them with sour milk, and mix them with low-fat fried turkey bacon, green onions, and grated cheese. The side dish is so delicious, you won't even notice the lack of the usual butter and sour cream.

Cooking the dish according to the recipe:
- Preheat oven to 350°F (175°C). Place the turkey bacon on a baking sheet and bake for 12-15 minutes until crisp. Cool and chop into pieces.
- Place the potatoes in a medium saucepan and cover with cold water. Bring to a boil and season with salt. Cook until tender, about 15 minutes. Then drain and mash the potatoes, adding the buttermilk. Season with salt and pepper. Add the green onions, cheddar, and bacon.
