How to Make - Lowcountry Boyle's Peasant Platter

A dish made from jacket potatoes, pork sausages, shrimp and corn.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 1,800 g medium shrimp
  • 1 1/2 lbs smoked pork sausages, cut into 7.5cm pieces.
  • 1,800 g medium red-skinned potatoes
  • 8 ears of corn, cut in half
  • 1/2 cup seafood seasoning
  • 2–3 medium sweet onions, peeled. Large onions can be quartered.

Cooking the dish according to the recipe:


  1. Fill a 30-liter saucepan halfway with water (you can use two large saucepans and divide the ingredients into two parts). Add the seasoning and bring to a boil.

    Place whole potatoes in a saucepan. Bring the water back to a boil and simmer for 5 minutes. Add the onions and sausages. Bring the water back to a boil and simmer for another 15 minutes. Add the corn. Once the water boils, simmer for 10 minutes or until the potatoes are tender.
  2. Add the shrimp, bring the water to a boil, and cook for about 3 minutes, until the shrimp turn red. Drain the shrimp in a colander. Serve the peasant platter on a separate platter or on newspaper.
