Slow Cooker Shrimp Boilies

You don't have to live on the coast to enjoy a New England-style seafood boilie. Use locally available shrimp. Simmer potatoes with seasonings in a slow cooker, then add corn, shrimp, and smoked sausage. It's a delicious and flavorful dish.

Ingredients:
- 1/4 cup seafood seasoning, such as Old Bay
- 2 large ears of yellow corn, cut into 2.5cm thick slices.
- 600 g large shrimp in shells, without intestinal veins
- 200g smoked Polish sausage, halved lengthwise and cut into 5cm pieces.
- 3 cloves garlic, lightly crushed
- 2 bay leaves
- 2 medium onions, each cut into 8 wedges
- 0.5 cup chopped fresh parsley
- 1/4 cup freshly squeezed lemon juice
- Crustless bread, for serving
- 1.3 kg very small red potatoes (about 2.5 cm in size)

Preparation:
- Step 1
- Place the potatoes, garlic, bay leaf, onion, 2 tablespoons of seafood seasoning in a 6-quart slow cooker and pour in 4 cups of water. Stir. Cover and cook on low for 4 hours. Step 2
- Remove the lid and reduce the heat to high. Carefully add the corn, shrimp, sausage, and the remaining 2 tablespoons of seafood seasoning. Cover and cook until the shrimp are pink and the sausage is heated through, 30-45 minutes. Gently stir in the parsley and lemon juice. Step 3
- Serve straight from the slow cooker or transfer the boilie to a large bowl and serve immediately with bread.
