Congee, or zhou, is a popular Chinese porridge made from overcooked rice, making it ideal for the slow cooker. There are many variations of congee for breakfast and dim sum, and this version is made with ginger, green onions, and chicken.

Ingredients:

  • 8 cups chicken broth, store-bought or homemade
  • 4 tbsp of water
  • 1.5 cups jasmine rice
  • 1 teaspoon coarse salt
  • About 4 cups shredded cooked chicken (from about 1 rotisserie chicken)
  • 2-3 tablespoons grated peeled ginger root
  • 3 green onions, thinly sliced
  • 1 medium bunch fresh cilantro, leaves chopped or torn
  • Sambal-olek (optional)
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Combine broth, water, rice, and salt in a 6-quart slow cooker. Cover and cook over high heat until the rice is tender, about 4 hours.
  • Step 2
  • When ready to serve, stir in the ginger and green onions. Ladle into bowls and garnish with shredded chicken and cilantro. Serve with sambal oelek sauce.
