Applesauce made from baked fruit acquires a richer, more concentrated flavor, which is perfectly complemented by aromatic thyme and a pinch of coarse salt. When the apples are soft, simply mash them with a potato masher, adding a little apple cider vinegar, and serve them with a variety of dishes, such as a fruity sauce for meat or a healthy alternative to jam for pancakes.

Recipe:
Combine 2 pounds (1 kg) peeled and sliced McIntosh apples, 2 tablespoons each unsweetened unfiltered apple juice and butter, 4 sprigs of thyme, and 1/4 teaspoon coarse salt in a baking dish. Cover and bake at 400°F (200°C) until soft, 30 minutes. Discard the thyme and add 2 teaspoons of apple cider vinegar; mash with a potato masher. Sprinkle with additional thyme.
