To make these cookies, wheat flour is mixed with rolled oats, and refined sugar is mixed with brown sugar in equal parts to give the cookies a light caramel flavor. Grated apple is also added to the dough for a delicious fruity flavor and softness. The cookies are fluffy and moist inside—you'll be hooked. Top each cookie with icing for a festive look. Cooking the dish according to the recipe:
- Position oven racks in the upper and lower thirds of the oven; preheat to 350°F (175°C). Line 2 baking sheets with parchment paper. In a medium bowl, combine the flour, oats, cinnamon, baking powder, baking soda, salt, and allspice. In a separate bowl, combine the butter, brown and white sugars, and eggs; beat until smooth. Add the grated apple and vanilla extract, then fold in the flour mixture and knead the dough.
- Drop 1 heaping tablespoon of the batter onto the prepared baking sheets, spacing them about 2.5 cm (1 inch) apart. Bake until the cookies are set around the edges, 10-12 minutes, rotating the baking sheets halfway through. Let cool on the baking sheets for 5 minutes, then transfer to a wire rack and cool completely.
