Dirty rice is a popular Cajun pilaf made with whatever meat, ground meat, or offal you have on hand. For example, this recipe uses smoked pork sausage. The rice is simmered separately in chicken broth and then combined with sautéed sausage slices seasoned with celery and bell peppers. A pinch of cayenne pepper perfectly complements the smoky flavor, while hot peppers add a piquant touch. Sprinkle the finished "dirty rice" with fresh parsley and enjoy.

Ingredients for the recipe:
- 2 cups long-grain white rice
- 5 cups chicken broth, divided
- 2 tablespoons of vegetable oil
- 450 g smoked pork sausages, thinly sliced
- 1 clove garlic, minced
- 1 large onion, chopped
- 1 stalk celery, chopped
- 1 medium green bell pepper, chopped
- 200 g frozen green beans
- 1/4 tsp cayenne pepper
- Half a hot pepper (optional)
- 1/4 cup chopped fresh parsley leaves

Cooking the dish according to the recipe:
- Cook the riceIn a medium saucepan, combine the rice and chicken broth. Bring to a boil, reduce heat, and simmer until the rice has absorbed all the broth, about 20 minutes.
- Meanwhile, heat the vegetable oil in a heavy-bottomed skillet over medium-high heat. Brown the sausage. Once browned, add the garlic, onion, celery, green beans, and bell pepper and hot pepper (if using). Cook until softened, about 5 minutes. Season with salt and pepper.
- Add 1 cup of chicken broth and cayenne pepper. Cook until the broth has reduced slightly. Add cooked rice and parsley and stir thoroughly. Taste and season with salt and pepper if needed.
