This balsamic dressing, based on a simple vinaigrette, is a wonderful complement to any vegetable salad, and even tossing it with salad greens will add a delicious touch. Balsamic vinegar has a complex, rich flavor with sweet and tart notes that it imparts to vegetables. Combine it with high-quality extra-virgin olive oil, minced garlic, salt, and black pepper, and shake thoroughly in a jar. All the ingredients are perfectly balanced, but you can add a little brown sugar if desired. You'll make a large batch of this dressing; store it in the refrigerator and shake vigorously before each use.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 1/4 cup balsamic vinegar
  • 2 tsp dark brown sugar, optional*
  • 1 tbsp chopped garlic
  • 0.5 tsp salt
  • 0.5 tsp freshly ground black pepper
  • 3/4 cup olive oil
  • Salad mix or your favorite salad greens, for serving
  • Other salad ingredients, such as cherry tomatoes, sliced ​​carrots, thinly sliced ​​red onion, chopped celery, diced cucumber, walnuts
  • Blue cheese, for serving

Cooking the dish according to the recipe:


  1. In a bowl, combine the vinegar, sugar (if using), garlic, salt, and black pepper until the sugar and salt dissolve. Then, whisking constantly, stir in the olive oil. Alternatively, combine all ingredients in a screw-top jar and shake well. Taste and adjust the seasoning if needed.
  2. Toss a few tablespoons of the dressing with the salad mix and any other salad ingredients, top with blue cheese, and serve immediately.

  3. If you're not using the dressing right away, cover and refrigerate. Shake again before using.

    Note *

    If you're using a good quality balsamic vinegar, you won't need any sugar, but if you're using a lower quality one, you might want to add some sweetness.
