    Homemade lemon liqueur Limoncello

Using a vegetable peeler, remove the zest from the lemons. Place the zest in a 3-liter pitcher. Pour in the vodka and stir. Cover with plastic wrap and let sit at room temperature for 1 week.

In a large saucepan, combine 3 1/2 cups water and sugar and cook over medium heat until the sugar dissolves, stirring occasionally, about 10 minutes.

Let cool completely, then pour the syrup into the pitcher with the vodka and zest and stir. Seal tightly again and let sit for 24 hours. Strain the liqueur through a sieve and discard the zest. Pour into clean bottles with airtight lids. Chill thoroughly for at least 4 hours, then store the lemon liqueur in the refrigerator for up to 1 month.
