Use this recipe to make gumbo from leftover roast turkey or rotisserie chicken.
The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:
- 450 - 700 g of chopped white and dark meat cooked turkey or grilled chicken
- 1 package (400 g) sliced frozen okra, optional
- 2 tablespoons of vegetable oil
- 3 tbsp (45 g) butter
- 2 tablespoons thyme leaves, finely chopped
- 3 - 4 stalks celery, chopped
- 3 - 4 cloves garlic, finely chopped
- 1 large bay leaf
- 1 large or 2 medium onions, chopped
- 1 large green bell pepper, chopped
- 3 tablespoons of wheat flour
- 2 shots of bourbon
- 2 cups chicken broth
- 3 - 4 tbsp. hot sauce
- 3-4 tbsp Worcestershire sauce
- 2 tbsp. l. brown sugar
- 2 tablespoons apple cider vinegar
- 400 g tomato sauce
- Cooked white or brown rice or crackers for serving
- Thinly sliced green onions for serving

Cooking the dish according to the recipe:
- Heat the oil in a large Dutch oven or heavy-bottomed saucepan over medium-high heat. Add the butter and melt. Add the thyme, celery, garlic, bay leaf, onion, bell pepper, and some salt and pepper. Cook, partially covered, until tender, 15 minutes.
- Sprinkle flour over the vegetables and stir. Add bourbon, then broth. Reduce heat slightly and simmer until the sauce thickens. Add hot sauce, Worcestershire sauce, sugar, vinegar, and tomato sauce. Add the turkey and okra and simmer for a few minutes. Serve or refrigerate and reserve for future meals. Reheat over medium heat before serving.
Serve gumbo in shallow bowls with rice or crackers and green onions.
