  • 1 large onion, diced
  • 1 medium green bell pepper, diced
  • 1 small fennel, white part only, diced
  • 1 tbsp paprika
  • 1.5 tsp dried oregano
  • 1.5 tsp dried thyme
  • 1 teaspoon garlic powder
  • 1 tsp onion powder
  • 1 teaspoon of salt
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 1 tbsp Worcestershire sauce
  • 4 large cloves garlic, minced
  • 6 - 8 cups chicken broth
  • 2 bay leaves
  • 1 bunch green onions, chopped

    Step 1
  • Heat 1 tablespoon of vegetable oil in a large, heavy saucepan over medium heat. Add the sausages and cook until nicely browned, about 7 minutes. Remove from the pan to a cutting board; discard the fat. Once the sausages have cooled, cut them into pieces.
  • Step 2
  • Add additional oil to the sausage fat to make 1/2 cup. Add flour to the fat and cook over medium heat, stirring slowly and constantly and scraping up any bits from the bottom of the pan, until the mixture thickens and turns chocolate brown, 25 to 30 minutes. Add the onion, pepper, and fennel and cook until softened, about 10 minutes.
  • Step 3
  • In a small bowl, combine paprika, oregano, thyme, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Add Worcestershire sauce.
  • Step 4
  • Add the garlic to the softened vegetables; cook until fragrant, 1 minute. Add the spice mixture and stir until smooth. Stirring constantly, add 6 cups of chicken broth and bring to a boil. Add the bay leaf. Reduce heat to medium and simmer until thickened, 30 to 40 minutes.

  • Place the sliced ​​sausage in the pot. Add the shredded chicken and all the remaining ingredients except the green onions. Cook for another 30-40 minutes, until the gumbo thickens further, adding more broth if necessary.

    Serve gumbo in bowls and garnish with green onions.
