Grilled duck breast will achieve the perfect flavor if you rub it first with a spice mixture that includes smoked paprika, garlic powder, chili, cumin, dry mustard, and a touch of Chinese five-spice powder, which pairs perfectly with duck meat and balances the sweet flavor of the smoked paprika. Duck breasts are grilled in the same way as beef steaks: medium or rare is sufficient to ensure juiciness and tenderness.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 1 tbsp. l. smoked paprika
  • 1 teaspoon garlic powder
  • 1 tsp ground cumin
  • 1 teaspoon chili powder
  • 0.5 tsp 5-spice seasonings
  • 0.5 tsp dry mustard
  • 4 duck breast halves
  • Vegetable oil, for frying

Cooking the dish according to the recipe:


  1. In a bowl, combine smoked paprika, garlic powder, cumin, chili powder, five-spice seasoning, dry mustard, and a little salt and black pepper. Using a sharp knife, score the duck skin to create a 0.5 cm mesh pattern. Rub the spice mixture all over the duck.
  2. Preheat the grill to medium heat (don't let it get too hot, as the duck will cook slowly to render the fat) and wipe the grates with a paper towel dipped in vegetable oil. Place the duck skin-side down on the grill and grill until seared and the fat has rendered, 4 to 5 minutes. If the drippings flare up, move the duck to a different area away from the heat. Turn the duck over and transfer it to a cooler area of ​​the grill. Grill for another 5 minutes for medium-rare. Let rest for 5 to 7 minutes, then slice across the grain into thick slices.
