The beauty of homemade soda is that you can experiment with flavors and combine the most unexpected ingredients, like in this grapefruit-flavored drink with a subtle zing of jalapeño. Grapefruit juice is simmered with sugar and half a jalapeño until it forms a syrup, then diluted with sparkling water. A perfect treat for summer parties! Don't forget to add plenty of ice.

In a medium saucepan, combine 2 cups grapefruit juice, 1/4 cup sugar, and 1/2 jalapeño (with seeds); cook over medium-high heat until syrupy, about 10 minutes. Let cool, then strain. Stir in the club soda.

For each serving of the drink, mix 2-4 tablespoons of syrup with 1 glass of cold sparkling water in a glass with ice.
