These adorable bowl-shaped cookies are filled with peanut butter. It's not just the filling; the cookie base itself is baked with peanut butter. During baking, the filling, which is actually a chocolate-coated Reese's candy, melts, creating a soft and creamy texture against the crumbly cookie and crunchy crushed peanut topping. Cooking the dish according to the recipe:
- Preheat oven to 350°F (175°C) and spray a 12-cup muffin tin with cooking spray.
- In a large bowl, beat the peanut butter, granulated sugar, light brown sugar, and salt with a mixer on medium-high speed until light and fluffy, about 5 minutes. Beat in the vanilla extract and egg at high speed and mix until combined.
- Place a small amount of decorative sugar in a small bowl. Form the dough into 12 balls and roll them in the sugar. Place one ball of dough in each cavity of the pan. Press the dough down 1 cm (0.5 in) up the sides of the cavity. You should have dough cups. Place a candy into each cup.
- Bake until the edges of the cookies are golden brown, 10-12 minutes. Transfer the pan to a wire rack, then immediately sprinkle the filling with chopped peanuts. Let cool for 15 minutes, then transfer the cookies to a wire rack to cool completely.
