How to make an "Egg in Bread" cake

Egg in Bread Cake
Many of us grew up eating eggs fried inside a slice of bread, and we call this dish by different names. But whatever the case, we're sure of one thing: you'll love this giant version! To imitate the bread, we take a trimmed sponge cake and cut a circle in the center, then fill it with marshmallow cream (the egg white) and canned peach (the yolk). To complete the look, serve the cake in a large cast-iron skillet.
Recipe: Egg in a Basket Cake
Step 1

Preheat oven to 350°F (180°C); coat a 9-inch, 2.2-inch-deep (2.25-inch) square baking pan with cooking spray. Prepare the cake mix according to package directions; pour into the pan and bake until a toothpick inserted comes out clean, 30 to 35 minutes. Cool slightly, then transfer to a wire rack to cool completely.
Step 2

Using a long serrated knife, trim the top of the cake to make it level, then cut into two equal layers.
Step 3

While the cakes are stacked, use a small serrated knife to round off the four corners of the sponge cake; make indentations on two opposite sides and on top, as shown in the photo, to create the shape of a slice of bread.
Step 4

Carefully transfer the top layer to a baking sheet and cut out a circle with a diameter of 8-10 cm in the center.
Step 5

Brush the top with melted butter and grill until golden brown.
Step 6

In a small bowl, combine the cream, cocoa powder, and yellow food coloring (it should be golden brown). Spread about half of the cream onto the bottom layer.
Step 7

Carefully place the top layer on the bottom layer (use two spatulas to move the top layer—it will be fragile). Spread a thin layer of frosting on the sides of the cake, mimicking the crust of bread.
Step 8

Stir the marshmallow cream well, then spoon it into the hole in the center of the cake.
Step 9

Place a peach half on top of the marshmallow cream and press lightly to partially submerge the edges. Let it sit for a few minutes, allowing the "scrambled egg" to set. Sprinkle with chocolate shavings to simulate ground pepper.
