These scrambled eggs are a variation on the more popular Denver omelet. Besides eggs, they contain the same traditional ingredients—bell peppers, onions, ham (or Canadian bacon), and cheese—but scrambled eggs cook much faster than omelets. Instead of grated cheese, they use curds, making the eggs softer, fluffier, and more chewy. They're filling, perfect for breakfast or dinner. Serve with fries.

Ingredients:

  • 280 g frozen French fries (about 4 cups)
  • 2 tablespoons unsalted butter
  • 1 green bell pepper, diced
  • 1 onion, diced
  • 4-6 slices Canadian bacon, diced
  • 10 large eggs
  • 1/4 cup milk
  • 1 green onion, thinly sliced
  • 170 g of curdled cheese (about 1 and 1/4 cups), break up large pieces
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Place the baking sheet in the oven and preheat the oven to 220°C. Place the fries on the hot baking sheet and bake, stirring once, until golden brown and crisp, 15-20 minutes.
  • Step 2
  • Meanwhile, melt 1 tablespoon butter in a large nonstick skillet over medium heat. Add the bell pepper, onion, Canadian bacon, 1/4 teaspoon salt, and a pinch of freshly ground black pepper. Cook, stirring occasionally with a silicone spatula, until the vegetables are golden brown around the edges and tender, 8 to 10 minutes.
  • Step 3
  • In a bowl, whisk the eggs with the milk, 1/2 teaspoon of salt, and black pepper to taste. Add the remaining 1 tablespoon of butter to the pan. Add the egg mixture and green onions and cook, stirring gently and folding them in, until the eggs are slightly set, about 4 minutes; add the curds one minute before they're done. Remove from the heat and stir once or twice until the eggs are completely set, about 2 minutes.
  • Step 4
  • Divide the eggs among plates. Serve with French fries.
