Soft and tender, these scrambled eggs are perfect for both breakfast and dinner, and the added Brie adds a creamy texture and a buttery flavor. Serve as a main course with a side salad or use them in sandwiches.

Ingredients:

  • 170 gr. Brie or Camembert cheese
  • 12 large eggs
  • 1/4 cup milk
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh green onions
  • 2 tablespoons unsalted butter
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Freeze the cheese for about 10 minutes, then cut off the rind and cut the cheese into 2.5 cm cubes. Freezing makes cutting easier.
  • Step 2
  • Combine eggs, milk, parsley and green onions in a bowl; season with salt and pepper.
  • Step 3
  • Heat a large nonstick skillet over medium-high heat, then add the butter. Once the foam subsides, add the egg mixture and cook, without stirring, until the edges are set, about 30 seconds. Using a silicone spatula, pull the set egg from the edges into the center of the pan. Repeat, running the spatula around the edge of the pan, until most of the egg is set, about 5 minutes.
  • Step 4
  • Sprinkle with cheese and let it melt slightly, then stir in the eggs. Remove from heat and let sit until the cheese melts, about 1 minute more.
