Ingredients:

  • 6 large eggs
  • 1.3 kg pumpkin or zucchini
  • 2 tbsp. l. olive oil
  • 4 green onions, finely chopped into rings, 3 tbsp reserved for sprinkling
  • 1 jalapeño pepper, seeded and chopped
  • 3 tbsp chopped fresh parsley
  • 1/4 tsp freshly grated nutmeg
  • 1 tbsp (15 g) butter
  • 1/2 tbsp. grated cheese Pepper Jack or mature cheddar
  • Salt and freshly ground pepper
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Grate the pumpkin on a coarse grater, place in a colander, add 1 tbsp. of salt and stir, leave in the sink for 40 minutes to drain the juice, then squeeze the pumpkin thoroughly.
  • Step 2
  • In a preheated skillet with a removable handle, pour olive oil, add the onion, jalapeño pepper, and salt. Cook over medium-high heat until tender, about 3 minutes. Add the grated pumpkin and cook, stirring, until softened, about 7 minutes. Sprinkle with parsley, nutmeg, and pepper to taste. Cook for another minute.
  • Step 3
  • Remove from the heat and smooth the surface. Make 6 small indentations and place a piece of butter in each. Crack an egg into each indentation, season with salt and pepper, and sprinkle with cheese.
  • Step 4
  • Place the pan with the fried eggs in a preheated oven at 190 C (375 F) and bake for 10-12 minutes. Sprinkle the finished pumpkin fried eggs with green onions.
