How to Make Eggs in the Clouds
Menu:Breakfast,
Time: 20 min.
Complexity: easily
Quantity: 4 sandwiches

To lift your spirits and those of your family in the morning, make some sunshine in the clouds for breakfast. This cheerful fried egg recipe requires no additional ingredients other than the eggs themselves. Just 20 minutes of your time and you'll have a creative and smile-inducing breakfast on the table. This fried egg recipe is made in the oven. First, you bake clouds of whipped egg whites, then you add a yolk into each one, and then bake it again, keeping the center runny. To create a spectacular fried egg, it's important to carefully separate the yolks from the whites without damaging them.

Preparation:

    Step 1
  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper and spray with cooking spray.
  • Step 2
  • Spray 4 small bowls with cooking spray. Separate the egg whites from the yolks and place them in a medium bowl. Divide the yolks into small bowls (1 yolk per bowl). Add a large pinch of salt to the egg whites and beat with a mixer on low speed until stiff peaks form, 2-3 minutes.
  • Step 3
  • Place 4 heaping spoons of the beaten egg whites on the prepared baking sheet and use the back of a spoon to make a small indentation in the center of each mound. Bake the egg whites until firm, dry, and beginning to brown, about 6 minutes.
  • Step 4
  • Carefully place 1 egg yolk into each egg white well. Bake until the yolk begins to set around the edges but is still runny inside, 3-4 minutes. Season with salt.
  • Step 5
  • Spread on toast and serve.
