Properly scrambled eggs should be tender, soft, and creamy. To achieve this, it's important to cook them in butter over medium heat to prevent them from browning or frying. When the eggs are almost done, top them with sour cream and sprinkle with green onions.

  • 3 large eggs + 1 egg yolk
  • 2 tablespoons unsalted butter, cut into 1/4-inch thick cubes and frozen
  • 1 tbsp sour cream
  • 1 tbsp chopped chives, optional

Preparation:

    Step 1
  • Beat the eggs and yolk in a bowl until smooth and uniformly yellow in color.
  • Step 2
  • Place the beaten eggs in a small saucepan with butter. Cook over medium heat, stirring constantly with a spatula. The eggs should begin to thicken. Adjust the heat to ensure the eggs are tender. When the eggs begin to set, season them with salt and pepper.

  • Continue frying until desired doneness. Mix with sour cream and sprinkle with green onions, if using.
