Mexican scrambled eggs are a hearty dish packed with vegetables and vibrant Southern flavors. Eggs are added to the pan after green onions, spicy jalapeños, milder poblanos, and corn have been sautéed in butter. Then, shredded, melty cheddar, crisp tortilla chips, and fragrant fresh cilantro are mixed into the eggs. The dish is ready once the eggs have completely set. Ingredients:

  • 2 tbsp (30 g) unsalted butter
  • 1 poblano pepper, seeded and diced
  • 1 bunch green onions, chopped
  • 1 red jalapeño, halved, seeded and thinly sliced
  • 0.5 tbsp. fresh corn kernels
  • 8 large eggs
  • 4 cups tortilla chips, lightly crushed
  • 1 cup grated cheddar (about 100 g)
  • 1/4 cup fresh cilantro, torn, plus extra for serving
  • Diced avocado, sour cream and pico de gallo, for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Melt the butter in a 10-inch cast-iron skillet over medium-high heat. Add the poblano, green onion, and jalapeño; cook, stirring, until the vegetables soften slightly, 1 to 2 minutes. Add the corn and 3/4 teaspoon salt; cook, stirring occasionally, until the vegetables are tender, about 2 minutes.
  • Step 2
  • In a large bowl, whisk the eggs with 1/4 cup water and 1/2 teaspoon salt. Add the eggs to the skillet and cook, stirring constantly with a silicone spatula, until set, about 2 minutes. Add the tortilla chips, 3/4 cup cheese, and cilantro to the skillet; cook, stirring to evenly distribute the ingredients, for another 1 to 2 minutes.

    If you are cooking a dish in a frying pan over coals or a fire, then fry it a little longer.

  • Sprinkle the omelet with the remaining 1/4 cup cheese and top with avocado, sour cream, fresh pico de gallo salsa and sprinkle with cilantro.
