A simple fried egg becomes much more delicious and interesting when prepared as huevos rancheros, a traditional breakfast for Mexican ranchers. Today, you can find various variations of huevos rancheros, created in regions where the recipe has gained popularity. The classic version uses slightly different ingredients, but the dish is in no way inferior to the original. Traditionally, huevos rancheros are served on a corn tortilla, with toppings such as refried beans, fresh spicy salsa, avocado paste, onions, and cilantro. The dish is easy to prepare, beautiful to look at, and a delight to eat.

Ingredients:

  • 4 large eggs
  • 4 corn tortillas, 6 inches in diameter, heated
  • 2 small tomatoes
  • 1 small onion
  • 1 medium jalapeño pepper, chopped
  • 2 cloves garlic; 1 chopped, 1 crushed
  • 1/2 tsp hot sauce
  • 1 tsp ground cumin
  • 2 tablespoons plus 2 teaspoons olive oil
  • 1 can (440 g) black beans, rinsed and drained
  • 1/2 cup crumbled feta
  • 1/4 cup freshly chopped cilantro
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Prepare the salsaPlace a grater in a large bowl. Grate the tomatoes and onion. Add the jalapeño, chopped garlic, hot sauce, cumin, and salt and pepper to taste to the same bowl. Heat a medium skillet over low heat and add 2 teaspoons of olive oil. Cook the salsa in the oil until slightly thickened (3 minutes). Transfer to a bowl. Add the beans to the same skillet along with the crushed garlic, 1/2 cup warm water, and a pinch of salt. Cook over low heat until heated through, lightly fluffing with a fork.
  • Step 2
  • Meanwhile, heat the remaining 2 tablespoons of olive oil in another skillet. Fry the eggs until sunny-side up, making sure the yolks are still runny on top. Season with pepper. Place 1 warm tortilla on each plate. Divide the beans among the servings, then top with a fried egg, a little salsa and cheese. Sprinkle with cilantro and serve with the remaining salsa.
