Ingredients:

  • 8 large eggs
  • 2 tbsp. l. olive oil
  • Half a small onion, chopped
  • 1 tbsp tomato paste
  • 2 tablespoons apple cider vinegar
  • 1 tbsp sweet mustard
  • 2 tsp Worcestershire sauce or steak sauce
  • Salt and freshly ground pepper
  • 2 cans (420g each) of canned white beans (1 reserved with juice, 1 drained and rinsed)
  • 1/4 cup chopped fresh parsley
  • 4 slices of white bread
  • 2 cups grape tomatoes of various colors, halved
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 375°F (190°C). Heat 1.5 tablespoons of olive oil in a large skillet. Add the onion and cook, stirring, until golden brown, about 5 minutes. Add the tomato paste and continue cooking, stirring, for another minute. Stir in the vinegar, sweet mustard, Worcestershire sauce, pour in 1/2 cup of water, and season with salt and pepper to taste. Bring to a boil, add the beans and liquid. Simmer for about 5 more minutes.
  • Step 2
  • Make eight wells in the bean mixture and crack an egg into each. Sprinkle the whites with salt and pepper, sprinkle the egg yolk with pepper, but leave it unsalted to prevent spotting. Bake until the egg whites are set, 10 to 14 minutes.
  • Step 3
  • Meanwhile, heat a large skillet over medium-high heat. Rub the bread with olive oil on both sides and toast in the skillet for 1 minute per side. In a bowl, combine the tomatoes, parsley, and remaining olive oil, and season with salt and pepper to taste. Arrange the toasts on plates, top each with 2 eggs, and serve the fried eggs with beans and a tomato salad.
