Cuban-style stewed pork ham with beans - a detailed recipe.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 2 pork knuckles
  • 2 cups dry red beans
  • 2 chopped white onions
  • 6 diced garlic cloves
  • 2 diced green bell peppers
  • 6 tbsp of water
  • 3 tablespoons of oil
  • 2 tablespoons ground cumin
  • 2 tbsp paprika
  • 2 tbsp. l. dried oregano
  • 2 tablespoons ground black pepper
  • 2 tablespoons coarse salt

Cooking the dish according to the recipe:


  1. Fill a large saucepan with water, add the red beans and shanks. Boil for 45 minutes until tender.
  2. In another medium saucepan, add enough oil, about 3 tablespoons, add onion, garlic, bell pepper, cumin, paprika, oregano, black pepper and fry until translucent, but not browned.

  3. When the stew in the pan has reduced by half, add the fried onion mixture and season with salt. Continue cooking until the water level has reduced to the level of the beans. Keep the dish warm until serving.
