Cuban-style stewed pork with beans - a detailed recipe.


Ingredients:

  • 2 cups dry red beans
  • 2 pork knuckles
  • 6 tbsp of water
  • 3 tablespoons of oil
  • 2 diced white onions
  • 6 diced garlic cloves
  • 2 diced green bell peppers
  • 2 tablespoons ground cumin
  • 2 tbsp paprika
  • 2 tbsp. l. dried oregano
  • 2 tablespoons ground black pepper
  • 2 tablespoons coarse salt
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Pour water into a large saucepan, add beans and pork. Simmer for 45 minutes until tender.

    In a medium saucepan, add oil, onion, garlic, pepper, cumin, paprika, oregano, and pepper and sauté until translucent but not browned.
  • Step 2
  • When the bean mixture has reduced by half, add the onion mixture and salt to the pan. Continue cooking until the water has evaporated to the level of the beans. Keep the dish warm. Serve with rice.
