A whole piece of pork shoulder is seared until golden brown, then braised in an apple sauce that gradually forms a sticky glaze on the surface of the meat. The pork is juicy, tender, and bursting with flavor. Serve with a side of coleslaw and apple.

Ingredients:


Pork
  • 2 tbsp. l. olive oil
  • 1 boneless pork shoulder weighing 1 kg.
  • 2 cloves garlic, crushed
  • 1 large onion, thinly sliced
  • 1.5 cups apple juice
  • 0.5 cup applesauce
  • 1/4 cup lightly salted soy sauce
  • 2 tablespoons light brown sugar
  • 2 tablespoons apple cider vinegar

Coleslaw with apple
  • 1 cup finely shredded white cabbage
  • 1 cup thinly shredded red cabbage
  • 0.5 cup grated carrots
  • 4 green onions, thinly sliced
  • 2 Granny Smith apples, sliced ​​into strips
  • 0.5 cup mayonnaise
  • 0.5 cup chopped fresh parsley leaves
  • 2 tbsp. grainy mustard
  • 1 tbsp. honey
  • 2 teaspoons apple cider vinegar
  • 2 pinches of coarse salt
Substituting ingredients

Preparation:

    Step 1
  • Preheat oven to 150°C.
  • Step 2
  • Pork:

    Heat olive oil in a large Dutch oven over medium-high heat. Season the pork shoulder with salt and pepper. Add it to the pan and sear for about 5 minutes on each side, for a total of 15-20 minutes. Transfer the pork to a plate and set aside. Discard any rendered fat in the pan and return it to the stovetop.
  • Step 3
  • Add the garlic and onion to the pan and cook until the onion softens slightly, about 2 minutes. Add the apple juice and deglaze the bottom of the pan.
  • Step 4
  • Scrape up any browned bits from the bottom. Add the applesauce, soy sauce, brown sugar, and vinegar and stir. Carefully return the pork to the pot and cover with a lid. Place the pot in the oven and simmer until the pork is very tender, about 3 hours.

  • Coleslaw with apple:

    Meanwhile, combine the cabbage, carrots, green onions, and apples in a large bowl. In a small bowl, whisk together the mayonnaise, parsley, mustard, honey, vinegar, and salt until smooth. Add the dressing to the salad and toss to combine thoroughly.

  • When the pork is done, carefully remove the lid and serve directly from the casserole. Slice it and serve with the cooking liquid and a salad.
