A wonderful pairing that pairs well with almost anything – pork can be cooked with any vegetables to create a harmonious dish, while zucchini, while relatively neutral in flavor, perfectly brings out the flavors of any meat and seasoning. This combination is also wonderful because both ingredients cook quite quickly. This recipe is captivating for its simplicity and minimal cooking requirements. Pork stewed with zucchini can be served as a standalone dish, or complemented with a side dish or fresh vegetables.


Ingredients:

  • 700 g of pork for stewing (pieces of meat from the hip or shoulder part, rib meat, brisket, without connective tissue)
  • 3 tbsp. flour
  • 0.5 tsp garlic salt
  • 0.5 tsp ground pepper
  • 1 tbsp. vegetable oil
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 4 cups mushrooms, sliced
  • 2 cans of 400g canned tomatoes in their own juice, do not drain the juice
  • 2 medium zucchini, halved and sliced ​​1.5cm thick.
  • 2 tsp dried basil, crushed
  • 1 tsp dried oregano, crushed
  • 1/3 cup Parmesan, grated
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a plastic or paper bag, combine flour, garlic salt, and pepper. Add the pork and shake to coat the meat with the flour mixture.
  • Step 2
  • Heat oil in a Dutch oven over medium-high heat. Cook the onion and bell pepper, stirring, until the onion is soft but not golden. Add the pork and cook, stirring, for 2-3 minutes, or until browned.
  • Step 3
  • Stir in the mushrooms, tomatoes, zucchini, basil, and oregano; bring to a boil, reduce heat, cover, and simmer, stirring occasionally, for 10-15 minutes, or until the pork is tender. Ladle the stew into soup bowls. Sprinkle with Parmesan cheese.
