This classic side dish is considered a staple for turkey or any other baked bird. You can add apples, mushrooms, sausage, nuts, or chestnuts if desired. Serve it separately in casseroles or stuff a whole bird with it. For the stuffing, generally use 1 cup of garnish for every 0.5 kg (1.5 lb) of poultry.

For a fuller flavor, sprinkle the side dish, cooked separately in a casserole, with the juices released during roasting.

In a large skillet, melt 110 g (4 oz) of butter over medium heat. Add 2 cups each of diced onion and celery and 1 tablespoon each of chopped sage and thyme. Season with salt and pepper to taste and cook for 5 minutes. Then pour in 3 cups of chicken or turkey broth and bring to a boil.

In a large bowl, beat 2 eggs with 1/4 cup chopped parsley, add 1/6 cups stale white bread, diced, then pour in the prepared vegetable mixture and toss. Transfer everything to a greased baking dish and scatter pieces of butter randomly on top.

Cover the pan and bake at 190°C. After 30 minutes, uncover the pan and continue baking for another 30 minutes until golden brown. (Or bake with the filling turkey).
