You can even make a delicious and juicy topping for ice cream using dried apricots. It's a great solution when you don't have any sweet sauces for a stunning sundae. To make it, poach the dried apricots in a small amount of water with a couple of tablespoons of sugar and a strip of lemon zest for a more complex flavor. Microwave the dried apricots for a few minutes and let them sit until they plump up and become juicy. Serve on top of yogurt ice cream, drizzle with a little dried apricot juice, and sprinkle with candied walnuts. A wonderful dessert to finish off your meal.
