The lack of a crust in this classic French quiche makes it a low-carb dish that's also much quicker to prepare. Just 10 minutes of effort and you're ready to bake it in the oven. Use a glass or ceramic pie dish. Prepare it by greasing it and sprinkling it with grated Parmesan cheese to give the finished quiche a delicious cheesy crust. The generous amount of spinach and green onions makes it incredibly moist, with a refreshing flavor that perfectly complements the savory flavor of smoked Gouda. It's a great dish for a light breakfast to start the day off, or an excuse to have tea with someone to celebrate March 8th and give a special gift.

3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.

1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.

Ingredients for the recipe:
- 2 tbsp unsalted butter, softened
- 4 tbsp. l. freshly grated parmesan
- 1 package (280 g) frozen spinach, thawed
- 2 large eggs
- 2 large egg yolks
- 2 cups of low-fat cream
- 110 gr. grated smoked gouda, about 1 tbsp.
- 2 tbsp. flour
- A large pinch of freshly grated nutmeg
- 3/4 cup chopped, trimmed green onions, white and green parts included, about 8 greens
- 1 teaspoon paprika

Cooking the dish according to the recipe:
- Preheat oven to 200°C. Grease a 22cm glass or ceramic pie dish with softened butter and sprinkle with half of the grated Parmesan cheese. Place the dish on a baking sheet.
- Working in batches, squeeze the spinach by hand to remove excess water. Place it in a food processor along with the eggs, yolks, cream, Gouda, flour, nutmeg, salt, and black pepper to taste. Pulse until the mixture is evenly green and the spinach chunks are incorporated, about 30 seconds. Add the green onions and pulse to combine. Pour the mixture into the prepared pan. Top with the remaining 2 tablespoons Parmesan and paprika.
- Place the baking sheet on the bottom rack of the oven and bake until the quiche is set in the center, about 40-45 minutes. Cool completely on a wire rack and serve.
