These plump little choux pastry treats are perfect for appetizers at holidays and house parties. Unlike other choux pastry treats, gougères are not sweet and are made with savory fillings, like this recipe with bits of fried bacon and smoked Gouda. Add crumbled bacon and some of the grated cheese directly to the dough, then sprinkle the remaining Gouda on top for a delicious cheesy crust. Everyone will love this treat!



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 1 cup flour
  • 110 g chopped butter
  • 4 eggs
  • 6 slices of bacon
  • 3/4 cup grated smoked Gouda
  • 2 tbsp chopped chives

Cooking the dish according to the recipe:


  1. Combine 1 cup water, 110g chopped butter, 0.5 tsp each coarse salt and black pepper in a saucepan and bring to a boil.
  2. Add 1 cup flour, reduce heat to low and cook, stirring, until dough pulls away from sides of pan and is shiny, about 3 minutes.

  3. Transfer the dough to the bowl of a stand mixer; beat in 4 eggs, one at a time, on medium speed until the dough comes together. Add 6 thinly sliced ​​fried thick bacon, 3/4 cup grated smoked Gouda, and 2 tablespoons chopped chives.
  4. Transfer the dough to a pastry bag; snip off the corner. Pipe 1-tbsp mounds of dough onto 2 parchment-lined baking sheets. Sprinkle with additional smoked Gouda.
  5. Bake at 200°C until the gougères are puffed and golden brown, 25-30 minutes, rotating the baking sheets after 20 minutes.
