Manicotti with spinach - detailed recipe.
Ingredients:
- 1 pack frozen spinach (defrost first)
- 340 gr. ricotta cheese
- 1/2 tbsp. grated parmesan
- 1 egg
- Salt
- 8 pancakes
- 3 cups tomato sauce
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.

- Step 1
- Preheat oven to 190°C. In a bowl, combine the ricotta, eggs, and half the Parmesan. Strain the spinach and squeeze out any remaining liquid. Add the spinach to the cheese mixture. Stir. Season with salt and pepper.
Take a pancake and spread 3-4 tablespoons of the cheese-spinach mixture on it. Roll it into a tube. Repeat with the remaining pancakes.
Evenly coat the bottom of a baking dish with sauce. Place the stuffed crepes in the dish. Drizzle with more sauce and sprinkle with Parmesan cheese. Bake for 30 minutes, until the cheese is bubbly. Serve.
