Ingredients:


Manicotti
  • 8 manicotti or cannelloni tubes (tube-shaped pasta)
  • Vegetable oil
  • 1 tbsp. l. olive oil
  • 9 pieces smoked bacon, cut into pieces
  • 285 g frozen spinach
  • 425 g ricotta cheese at room temperature
  • 1/3 cup grated Parmesan cheese, room temperature
  • 1/4 tsp ground black pepper
  • 1/4 tsp. nutmeg
  • 1 large egg, room temperature
  • 120 g grated mozzarella for sprinkling
  • Olive oil, for drizzling

Sauce
  • 2/3 cup heavy cream, whipped
  • 1/3 cup whole milk
  • 1 tbsp flour
  • 1/4 teaspoon salt
  • 1/8 tsp ground black pepper
  • 2 large pinches of nutmeg
  • 170 g of grated mozzarella
  • 1.5 tbsp. tomato sauce with basil
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 190 degrees Celsius. Grease an oval or rectangular baking pan with vegetable oil.

    For manicottiBring a large pot of water to a boil over medium heat. Add the butter and pasta. Cook until tender, stirring occasionally, 5 to 7 minutes. Drain and cover to allow the pasta to steam slightly.
  • Step 2
  • In a large skillet, cook the bacon until crisp and browned, about 7 minutes. Drain on paper towels and set aside to cool.

    In a large bowl, combine the cooled bacon, spinach, ricotta, Parmesan, 1/2 teaspoon salt, pepper, nutmeg, and egg. Mix until smooth. Using a small spoon, fill the manicotti tubes with the ricotta mixture.
  • Step 3
  • For tomato sauceIn a medium saucepan, combine the whipped cream, milk, flour, and nutmeg. Season with salt and pepper, and simmer over medium heat until thickened. Add the mozzarella a little at a time, stirring constantly, until the sauce thickens. Reduce the heat to low and simmer for about 1 minute, stirring occasionally. Stir in the tomato sauce.

    Pour half the sauce into the bottom of the prepared baking dish. Arrange the manicotti in a single layer on top of the sauce. Pour the remaining sauce over the manicotti and sprinkle with mozzarella. Drizzle with olive oil and cover the dish with foil. Bake until the cheese is melted, 20 to 25 minutes.
