Smoked Gouda has a pleasant, unique flavor, but it struggles to achieve the gooey consistency needed for hot cheese sandwiches. By pairing it with a less pronounced but more melting cheese, such as Muenster, you can achieve the perfect flavor and texture.

Ingredients for the recipe:
- 8 square slices of white bread, about 1 cm thick.
- 110 g very thin slices of smoked Gouda
- 4 slices Muenster (about 110 g)
- 1 medium roasted sweet pepper, patted dry and thinly sliced
- 2 cups fine arugula
- 6 tbsp unsalted butter, softened

Cooking the dish according to the recipe:
- Place 4 slices of bread on a work surface. Top each with a small amount of smoked Gouda, 1 slice of Muenster, a thin layer of sliced roasted peppers (about 50g), 15g of fresh arugula, and another layer of smoked Gouda. Top the sandwiches with the remaining bread.
- Lightly and evenly butter both sides, using about 1.5 tablespoons butter for each sandwich.
- Place 2 sandwiches in a medium nonstick skillet and heat over medium heat. Cover the skillet and cook until the bread is evenly browned, about 2 minutes.
- Flip, cover again, and cook until the top is deep golden brown and the cheese is visibly melted, about 2 more minutes. Repeat with the remaining sandwiches.
