Menemen is a scrambled egg dish with tomatoes and bell peppers, often served for breakfast in Turkey. Some people add onions to menemen, but this is a controversial ingredient: many argue that onions should not be included. Other variations of this dish use cheese (such as kaseri) or sujuk, a dry sausage. Traditionally, menemen is made with Turkish sweet green peppers (yeşil biber), but in this recipe, they were replaced with the more affordable Italian cubanelle. Green bell peppers or sweet banana peppers would also work.

- 4 large tomatoes (about 700 g), diced

Cooking the dish according to the recipe:
- Heat the olive oil in a large skillet over medium heat. Cook the bell peppers, stirring frequently, until softened, about 5 minutes. Add the tomatoes and cook, stirring occasionally, until they begin to soften and release their juices, 5–8 minutes.
- Crack the eggs into a small bowl and beat lightly with a fork.
- Add the eggs to the tomatoes and stir. Season with salt and about 1/3 teaspoon of black pepper. Cook, stirring gently, until the eggs are set, about 3 minutes, being careful not to overcook them. Sprinkle with parsley and serve with warm bread.
