Yeast pizza dough with wine - a detailed recipe.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 1/4 cup dry red or white wine made from Fiano grapes, such as from the Italian province of Avellino
  • 3/4 cup warm water
  • 42 g fresh yeast
  • 1 tbsp. honey
  • 1 teaspoon of salt
  • 1 tbsp olive oil, plus 1 more tbsp.
  • 3.5 cups premium flour

Cooking the dish according to the recipe:


  1. Pour the wine, water, and yeast into a large bowl. Stir until dissolved. Add honey, salt, and a tablespoon of olive oil. Mix well.

    Add another tablespoon of flour and stir with a wooden spoon until a thin dough forms. Add another 2 tablespoons of flour and stir for 2-3 minutes with a wooden spoon to incorporate as much flour as possible into the dough.
  2. Shape the dough with your hands and turn it out onto a floured board or marble surface. Knead for 6-8 minutes, until the dough is smooth and firm. Place it in a clean, lightly oiled bowl, using the remaining tablespoon of olive oil, and cover with a towel. Let it rise in the warmest part of the kitchen for 45 minutes.

    For individual pizzas or calzones, cut the dough into 4 equal pieces and roll them out into circles. For one large pizza, roll out 1 large circle. Let rest for 15 minutes.
