How to Make Eton Mess

If you're making Eton Mess with out-of-season strawberries, you can use freshly squeezed pomegranate juice. In this case, sprinkle the top of the luxurious meringue cream with berries and pomegranate seeds.

There's no version of this pudding I don't love, and I've made several. This one uses fresh, good-quality bottled pomegranate juice to release the fragrant summer nectar from the strawberries.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 4 cups strawberries
  • 2 tsp. ultrafine sugar or vanilla sugar
  • 2 teaspoons of pomegranate juice
  • 2 cups whipping cream
  • 1 pack of portions meringue baskets

Cooking the dish according to the recipe:


  1. Remove the sepals from the strawberries and chop them. Place them in a bowl, add sugar and pomegranate juice, and let them sit to release the juice while you whip the cream.

    In a large bowl, whip the cream until thick but still soft.
  2. Dessert "Eton Mess"

  3. Coarsely crush 4 meringue cups: you'll need both chunks and fine dust to get the right texture.

  4. Set aside about half a cup of chopped strawberries and fold the remaining berries into the meringue cream.

    Mound the dessert onto 4 serving plates or glasses and top each serving with a few of the remaining strawberries and juice.
