Portuguese-style marinated fish - a detailed recipe.
The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:
- 6 pcs. cod or haddock fillet (170 g each)
- 1/2 cup wheat flour
- 2 tsp aromatic spice (see ingredients below)
- 1/4 cup olive oil
- 1/2 cup table vinegar
- 1/4 cup fresh orange juice
- 1/2 cup thinly sliced onion
- 1/2 cup thinly sliced red bell pepper
- 1 tbsp. minced garlic
- 2 tbsp coarsely grated orange zest
- 1 bay leaf
- 1 teaspoon red pepper flakes
- 1 tsp. mustard seeds
- 1 teaspoon of salt
- 1/2 teaspoon sugar
- 2 oranges, sliced crosswise
- 3 tablespoons chopped fresh cilantro
Creole Spice Mix:
- 2.5 tbsp paprika
- 2 tbsp. salt
- 2 tbsp garlic powder
- 1 tbsp. black pepper
- 1 tbsp onion powder
- 1 tbsp. cayenne pepper
- 1 tbsp dried oregano leaves
- 1 tbsp dried thyme
- Mix all ingredients thoroughly. and store in an airtight jar or container

Cooking the dish according to the recipe:
- Mix the flour with the Creole seasoning and lightly coat the fish in the mixture, shaking off any excess.
Heat oil in a large skillet over medium-high heat. Add the fish and cook until cooked through, 2-3 minutes per side. Transfer to a glass or ceramic baking dish large enough to accommodate the fish in a single layer. - In a bowl, combine the remaining ingredients and vinegar. Pour over the fish, cover, and marinate in the refrigerator for at least 12 hours and up to 24 hours, turning the fish occasionally and basting it with the marinade.
Remove the fish from the refrigerator. Transfer to a platter, garnish with orange slices and sprinkle with cilantro. Serve.
